Crunchy Ranch Tortilla Chicken
I love it when I find great new recipes that my family loves to eat.. I get bored making the same old thing and then we tend to eat out during that rut...
I bought this cookbook this summer from a friend's Southern Living party.. and I just opened it last night.
I love this book because it really is for families and BUSY moms!

I have already meal planned and shopped for the rest of the week for two more recipes from this book.
Like any recipe book there are some I would no try, but so far I am 1 for 1 in liking the recipes. IT also has fabulous colored pictures!!
PLUS everyone ate every single bite, two teenagers, and 3 smaller munchkins... Jeff was at Poker but he would have liked it too!!

Shopping List:
1 envelope of Ranch Dressing
2 lb, Cxn tenders
1 Small carton of buttermilk
1 bag of cool ranch doritos
carrots
celery
1 bottle of ranch dressing (I prefer Hidden Valley)
Makes 8 servings:
1. Preheat oven to 450 degrees
sprinkle 1 tbsp dressing mix over chicken
2. Whisk together buttermilk, egg and remaining dressing mix.
Place flour and crushed chips in a separate shallow dishes. Dredge cxn tenders in flour; then dip in buttermilk mixture, and roll in crushed chips. Spray lightly on all sides with baking spray. Set aside.
3. Place a large baking sheet in 450 degrees for 5 min. Place chicken on HOT pan. Bake 18 min or until crust is lightly browned.
Serve with carrot and celery sticks with Ranch Dressing to dip; salad and broccoli too!
